DrivePool is the easiest to setup and is trouble free. The alternatives are http://flexraid.com (steep learning curve) or http://drivebender.com (hit or miss, also a bit strange to setup)

Did you format the drives before you started? Try righ clicking the hard drives themselves the check / reset permissions AND security. Reset them all etc

yeah show hidden folders, check for the pool part folder on each drive directly and see if the video folders are still there on every drive.
